Corned Beef & Cabbage

This recipe originated as a lazy mom recipe. I used to try a new recipe every year, until I had seen the key was adding beer to the crock pot. I played with different types of beer and each one gave a different flavor. I settled on Guiness to give it the rich beef taste. This recipe takes about 15 minutes to prepare and cooks for about 6 - 8 hours.

Ingredients:

1 Corned Beef brisket

1 Head of Cabbage

1 bag of mini red potatoes ( can substitute coursely chopped red potatoes if necessary)

1 can of Guinness (must be the can with the nitrogen ball, not bottled)

Steps:

  1. Place your mini potatoes into the crock pot. These must be on the bottom to fully cook.

  2. Chop the cabbage into large chunks.

  3. Place the meat in the crock pot and top with the seasoning packet.

  4. Place cabbage on top of the meat.

  5. Pour the Guinness on top of everything. Move around the cabbage so the beer doesn’t sit on top of it and goes down onto everything else in the crock pot.

  6. Serve with soda bread.
